chocolate brownies


Ingredients:



unsalted butter 255gsorbitol 30g


sugar 360g

emulsifier 10g

egg 280g

salt 3g

warm cocoa mass 45g

chocolate paste 15g

pregelatinized starch 15g

all purpose flour 285g

baking powder 6g

cocoa powder 30g

walnut 150g

dark pitted cherry 270g

chocolate chips 60g

Methods:


1.mix butter,sugar and emulsifier on medium speed
for 15 minutes until fluffy.

2.add eggs over 10 minutes on medium speed.

3.pre-blend sorbitol,warm cocoa mass and chocolate

paste before adding on slow speed for 1 minute.

4.sieve flour,baking powder and cocoa powder

and mix on slow speed for 30 second.

5.add walnut,dark pitted cherry and chocolate

chips on slow speed for 30 second.

6.transfer into a square aluminium tray measuring 25 x 25 cm

and bake at 160C on water bath for about 1 1/2 hours.

7.cool down and apply a thin layer of chocolate fudge

and decorate with several pieces of walnut.

drizzle with white chocolate.
